Seeking partners to develop innovative bi-valve solutions along the whole supply chain from sea to plate & beyond

Mussels & other bi-valves have been identified as a future source of affordable & sustainable protein. They are very nutritious & have the potential to be farmed in large quantities with a very low environmental impact. To encourage mainstream consumption, we are seeking solutions & potential partners to help us produce frozen retail products that deliver desirable organoleptic attributes & marketing claims.

We are looking to collaborate with individuals, companies or academic institutions to develop innovative solutions along the whole supply chain from sea to plate & beyond, including:

• Selective breeding, for production, processing, nutrition & organoleptic properties
• Sustainable farming & harvesting
• Post-harvest treatments eg depuration, decontamination
• Consumer safety
• Meat/protein extraction, preferably without denaturing the protein
• Freezing
• Product structuring & development, of intact meat, minced/chopped meat or extracted protein.
• Environmentally responsible use of by-products eg shells
• LCA measurement & reduction throughout supply chain
• Nutritional benefits
• Consumer attitude & behaviour change

Technologies should preferably be demonstrated at pilot scale with potential application in large scale production or manufacture within ~5yrs.

Nature of collaboration is to be negotiated & may include joint applications for UK or EU research funding.
